To Die for Muffins
1 1/2 cup all purpose flour
3/4 cup white sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
topping:
1/2 cup white sugar
1/4 cup butter, cubed
1. preheat oven to 400"
2.combine dry ingredients
3.place oil into a 1 cup measuring glass, add the egg and enough milk to fill cup.
4.mix wet with dry and fold in berries.
5. Fill muffin cups. (we used the big foil cups on a huge cookie sheet-no muffin tins to clean!)
6.sprinkle with crumb topping and bake for 20 minutes or until done.
